01 -  Bring a large pot of water to a boil. Add noodles and cook according to package instructions until al dente. Drain well and return to the pot. 
 02 -  Pour peanut sauce over the warm noodles. Add shredded cabbage and carrots. Toss thoroughly to coat all ingredients evenly. 
 03 -  Serve immediately for a warm dish or refrigerate to enjoy cold. Garnish with cilantro, chopped peanuts, or scallions if desired.
