01 -  If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. 
 02 -  In a large mixing bowl, combine olive oil, ranch seasoning mix, minced garlic, black pepper, kosher salt, grated parmesan cheese, chopped parsley, and lemon juice. Stir until evenly blended. 
 03 -  Add chicken cubes to the marinade and toss thoroughly to ensure even coating. Cover and refrigerate for at least 30 minutes or up to 2 hours for maximum flavor. 
 04 -  Thread marinated chicken pieces onto the skewers, leaving a small gap between each piece for even cooking. 
 05 -  Heat a grill or grill pan to medium-high temperature. 
 06 -  Place skewers on the grill and cook for 12 to 15 minutes, turning occasionally, until chicken is cooked through and lightly charred on the edges. Ensure internal temperature reaches 165°F. 
 07 -  Transfer finished skewers to a platter. Garnish with extra parsley and serve with ranch dressing and lemon wedges if desired.
