01 -  In a large bowl, combine ground turkey, breadcrumbs, egg, minced garlic, Italian seasoning, salt, and pepper. Mix thoroughly until just combined. 
 02 -  Form the mixture into small, evenly sized meatballs. Optionally, heat a nonstick skillet over medium heat and brown meatballs lightly on all sides, turning gently. 
 03 -  Transfer the meatballs to a freezer-safe container. Add chicken broth, sliced carrots, sliced celery, and chopped kale around the meatballs. 
 04 -  Freeze container until ready to use. To prepare, thaw fully in the refrigerator, then transfer contents to a large saucepan. Simmer over medium heat until meatballs are fully cooked and vegetables are tender, about 30 minutes.
