# Additional Tips::

01 -
  • It turns bland summer squash into something people actually fight over.
  • The whole thing takes less time than waiting for pasta water to boil.
  • You can prep it hours ahead and let the flavors marry in the fridge.
  • It works as a side, a topping, or straight off the grill with your fingers.
02 -
  • Don't slice the zucchini too thin or they'll fall apart and slip through the grill grates.
  • Let them marinate for at least 5 minutes so the garlic mellows and the herbs release their oils.
  • Resist the urge to flip them early, patience gives you those gorgeous char marks.
03 -
  • Use a grill basket if you're nervous about losing slices through the grates.
  • Don't skip the lemon juice, it's the difference between good and unforgettable.
  • Let the zucchini come to room temperature before grilling for even cooking.
